Contemplation on banana bread

So I’ve been experimenting with banana bread for a while, and I’m still tweaking the recipe.  The current incarnation is:

250 g flour
1 tsp salt
1 tsp baking powder
350 g banana, mashed or blended
200 g sugar
0.5 c butter
80 g milk, softened
1 tsp lemon juice

The ingredients are mixed via the muffin method (mix all the dry ingredients together; mix all the wet ingredients together; pour the wet into the dry, and mix).  Pour into a greased loaf pan and bake @ 350 deg for 45-60 min.

Results: There was an odd density gradient- the bottom 1/4 to 1/2 inch of the bread was noticibly more dense and lacked the crumb of the rest of the bread.

Probable changes: Bake on the bottom shelf or on a pizza stone to increase the heat received by the bottom.  Maybe more leavening too; there’s not much structure to capture the gas, but it still might be enough to lighten the bottom.
